The High Weald Dairy is both an inspiration and a delight! The business had been operating since the late 80’s and started off with just a few sheep producing a a few litres of milk each day from the family farm in Duddleswell. It now is a much larger operation that produces delicious range of 15 different cheeses from sheeps and cows milk. Mark and Sarah Hardy are the husband and wife team who operate this fantastic Sussex business along with their team of cheesemakers and office workers. We use the St Giles organic and the Brighton Blue cheese on our burgers. Both offer a fantastic melting point and a delicious flavour.
I had the pleasure of attending a one day cheesemaking course run by Mark, Sarah and Gary and its a great opportunity to not only make (and eat!) cheese but to also tour the dairy and see how its all made, stored and packed.
